Back in October I created a breakfast sandwich called the Filipino Elvis. It consisted of Lily’s Peanut Butter and bananas on toasted péigēn miànbāo, or “bacon bread,” from New Fully Bakery. Sadly that Elmhurst bakery no longer makes the wedge of spiral bread filled with bacon and slightly sweet pork floss. The sweetness of the Filipino peanut butter and the smokey, salty bacon and sweet pork floss made for a great start to the day.
I’ve been eating bananas and Lily’s on white toast for breakfast for months, but it’s just not the same sandwich as the Filipino Elvis. And then I came across some Bolivian beef floss, and thus was born the Bolivian Elvis. The crunchy salty strands of meat play very well with the banana and peanut butter. They also make a great topping for congee, another of my favorite breakfasts.
By now you’re probably wondering where I happened upon Bolivian beef floss. First of all I should point out that it’s called charquekan. It’s made from beef that’s dried for three days, boiled, beaten with a mallet until it frays, and finally crisped up in a hot pan. I owe this discovery to fellow food nerd and ace Instagrammer snackwithsue who turned me on to Puerta Del Sol, a Bolivian restaurant in Woodside this past weekend.
The restaurant’s owner Jose Sanchez told us that Bolivians from as far away Virginia come to at the delicacy. It is a veritable mountain of meat floss atop hominy corn kept company by two hard boiled eggs, two wedges of quesillo cheese, and a potato. I enjoyed the dish but there was so much of it, that I took the better part of the plate home. Somehow, I knew I’d find a use for it. I’m glad my hunch was right!

As any one who’s talked to me for than five minutes about food in Queens knows, I’m a firm believer that the best Thai food in New York City can be had in Elmhurst. In fact I love the Little Bangkok that runs along Broadway between Whitney and Woodside Avenues so much that it’s the star of one of my food tours. So this month the boys at Queens Dinner Club and I are offering Big Taste of Little Bangkok, on June 22 at 7:30 p.m. at our new home in Kaufmann Astoria Studios. The evening’s menu will include some of our favorite dishes from local hot spots Dek Sen, Eim Khao Mun Gai, Pata Paplean and Sugar Club. Dek Sen will be preparing tom yam, the classic Thai papaya salad, and moo ping Brooklyn, savory pork skewers. In case you’re wondering the name comes not from an affinity with the County of Kings, but rather the niece of one of the owners who’s named Brooklyn. Sugar Club added Thai style congee to the menu just in time for winter.
Like much of New York City, Queens is now in winter’s icy grip. Unlike most of the rest the city though we have two Chinatowns and the most robust K-town in New York City, which is all a very long way of saying that there are many many options when it comes to Asian soups. Here are our seven of our favorites.

1. Thai Congee, Sugar Club “Thai people like the pork one,” the kid behind the counter responded when asked which variety of Thai congee was better. Earlier this week Sugar Club started selling the rice porridge, known as jok in Thailand, just in time for winter. The shop’s version ($6.50) of the ubiquitous Asian breakfast porridge features an egg stirred in, mushrooms, and a tangle of noodles. As for the pork it turns out to be lovely little meatballs. Doctored up with chili flakes and salty Golden Mountain sauce this combination porridge/noodle soup its a great way to ward off winter’s arctic chill. 2. Lamb Hot Pot, Beijing First Lamb Shabu I’m no fan of Chinese style hotpot, but the stuff they’re making at Beijing First Lamb Shabu, (Lao Cheng Yi Guo in Chinese) is truly special, mainly because the specialty of the house isn’t traditional hotpot, but rather a rich lamb stew. Upon entering the Flushing branch of this Beijing chain I was floored by pervasive aroma of gamy lamb and five spice. Like many hot pot joints there’s a ballot-like menu with all sorts of add-ins and soup bases. The difference here is that all of the soup bases feature a combination of mutton ribs and spine in a rich heady broth. Lao Cheng Yi Guo thoughtfully provides gloves so you can pick up the vertebrae and get at the ridiculously tender bits of meat that cling to the lamb spine. Someone once told me that eating lamb spine is a fertility tonic for men. I’m not sure about tha,t but Lao Cheng Yi Guo certainly put a smile on my face and warmed me up. When I was a kid the old man would return from Chinatown laden with hong bao, lucky red shopping bags. Usually these were filled with dried mushrooms, superior soy sauce and other ingredients. There treats were for me and him—lo mai gai, packets of sticky rice—and treats of a sort for my Mom, notably congee.(more…)
Fuchsia Dunlop’s account of wrangling with passel of stag pizzle in the latest Lucky Peach is alternately harrowing and humorous. It’s been five years since I took the acclaimed British cook and Chinese food expert to explore Flushing’s Golden Mall, so I thought I’d put my aside my castration anxiety aside and drop the author of Every Grain of Rice: Simple Chinese Home Cooking; Shark’s Fin and Sichuan Pepper: A Sweet-Sour Memoir of Eating in China, a line. Dunlop who is currently eating her way through Beijing was kind enough to answer Seven Questions. By the way if you want to get really hungry follow her adventures on Instagram.
Are there any misconceptions about Chinese food you’d like to dispel? I’ve spent my entire food-writing career trying to dispel various misconceptions about Chinese food—most of all that it’s unhealthy! Of course if one were to eat deep-fried egg rolls and sweet-and-sour pork all the time it wouldn’t be a very healthy diet, but most Chinese home cooking is about rice or other grains with plenty of vegetables and a little meat, fish or poultry. I’ve always been impressed by Chinese knowledge of how to eat for health and happiness (and it’s sad to see how many younger people are now following in the unhealthy food footsteps of the West).
The other misconception is that ‘Chinese food’ is a single cuisine. China is a vast country with an incredible wealth of local and regional culinary traditions. (more…)
